GRAPE OF VINIFICACION  is the grape for making wine,it is the fresh, mature or overmature grape in the plant or staying out in the sun  after harverst(vendimia) used to make mosto or wine.As you see it is a completly natural process.

 

PASA   is the grape dried after its maturation with a dehydration degree( that is taking water out or eliminating water) allowing its conservation and consumption

MOSTO  is the juice obtained by squeezing fresh grape before the process of fermentation starts. This  is what really identifies the “mosto” concept. Although this is the universally admitted concept  of mosto. In Andalusia  we also give the name “mosto” to young wines  of the year .
